Ingredients for 4 people Leaves from each of 2 sprigs of parsley and basil, plus a little more for garnishing For the dough 160 g milk 15 g fresh yeast 0.5 tsp sugar 50 g extra virgin olive oil, plus a little more for greasing 275 g wheat flour type 550 Salt 100 g Gouda in pieces 40 g soft garlic butter For the filling 4 cloves of garlic 1 tbsp extra virgin olive oil 400 g peeled tomatoes (can), drained 2 tsp dried Italian herbs freshly ground black pepper 250 g feta in pieces 1️⃣ For the dough, put the herbs in the mixing bowl, chop for 2 seconds Turbo and transfer. Heat the milk, yeast and sugar in the mixing bowl for 3 minutes 37 °C level 2. Add the parsley, oil, flour and 1⁄2 tsp salt, mix everything for 2 minutes Knead in dough mode. Transfer the dough to a bowl and cover and leave to rest for approx. 1 hour. Rinse the mixing bowl. 2️⃣ Grease the baking dish with oil. Place the dough on a lightly floured work surface and divide into 10 pieces. Shape each into a ball and place around the edge of the baking dish. Cover and leave to rest again for approx. 1 hour. 3️⃣ Preheat the oven to 200 °C top/bottom heat. Spread the dough with garlic butter. Put the cheese in the mixing bowl, chop for 8 seconds level 7 and transfer to another bowl. Chop the garlic in the mixing bowl for 2 seconds turbo. Push down with the spatula. Add oil and sauté for 2 minutes 120 °C level 1. Add the tomatoes, herbs, 1⁄2 tsp salt and 2 pinches of pepper and chop everything for 5 seconds level 5. 4️⃣ Spread half of the feta in the middle of the baking dish. Add tomatoes and sprinkle with the remaining feta and grated cheese. Bake in the hot oven for 20-25 minutes until golden brown. Then remove from the oven and serve while still warm, garnished with herbs.
