Ingredients for 12 muffins for the base and the crumble: 240 g flour, type 405 160 g cold butter 1 pinch of salt 1 tsp baking powder 85 g sugar for the filling: 125 g sugar 165 g butter 500 g quark 1/4 tsp grated lemon peel 1 packet of vanilla pudding powder 2 eggs 1️⃣ Preheat the oven to 180 °C top/bottom heat. Grease the muffin tin with butter. 2️⃣ For the shortcrust pastry, put 240 g flour, baking powder, 85 g sugar, 160 g butter in cold pieces and salt into the mixing bowl and knead for 20 seconds level 4. 3️⃣ Form the dough into a ball and wrap in cling film, then chill for approx. 30 minutes. 4️⃣ Put 165 g butter in the mixing bowl and melt for 3 minutes 65 °C level 1. Add quark, 125 g sugar, 2 eggs, lemon zest and pudding powder and mix for 10 seconds level 4. Transfer to a bowl and clean the mixing bowl. 5️⃣ Divide the shortcrust pastry into 14 equal portions. Press 12 portions into the muffin tin, pulling up one edge. 6️⃣ Put the remaining dough with 25 g flour in the mixing bowl and mix for 10 seconds level 4 to make crumbles. 7️⃣ Spread the cheesecake mixture on the shortcrust pastry bases. 8️⃣ Top the muffins with crumbles.
