Recipe for 1 liter of ice cream mixture - Thermomix® TM6, TM5, TM31: 100 g sugar 15 g fresh organic lemon zest 600 g Greek yoghurt 10% 160 g cream at least 30%, better confectioner's cream 36% (the less fat, the more ice crystals form) 6 tbsp fresh lemon juice 1/4 tsp guar gum (see recommendation list below) Put 100 g sugar and 15 g fresh lemon zest in the mixing bowl. 30 seconds / level 10 Push everything down with the spatula and loosen it up a bit. Add 600 g Greek yoghurt 10%, 160 g cream (at least 30%, even better 36% confectioners' cream) and 6 tbsp fresh lemon juice to the lemon sugar in the mixing bowl. 1 minute / level 6 Sprinkle ¼ tsp guar gum over the mixture. 30 seconds / level 6 If you don't have an ice cream maker: When freezing in ice cream containers, stir the ice cream mixture every hour. When it is firm enough, put a little cling film on the mixture so that no crystals form. Take it out of the freezer 15-20 minutes before serving and let it thaw in the fridge.
