Recipe for Thermomix® TM6, TM5, TM31: 300 g wheat flour type 550 150 g spelt flour 630 75 g wholemeal rye flour 2 level teaspoons of salt 300 g water 2 packets of dry yeast or 1 cube of yeast (if left to rise overnight, the yeast can be reduced by half) 1 teaspoon of sugar Put 300 g wheat flour type 550, 75 g wholemeal rye flour, 150 g spelt flour 630 and 2 level teaspoons of salt in the mixing bowl. 1 minute / level 4 - transfer Put 300 g water, 2 packets of dry yeast and 1 teaspoon of sugar in the mixing bowl. 4 minutes / 37°C / level 1 Add the flour mixture. 5 minutes / dough level Leave to rest in the bowl for 90 minutes. Put the dough on a floured work surface, push it apart and fold it several times. Pull it apart again and fold it again until it is relatively firm. Form it into an oval loaf and place it in a Roman pot that has been brushed with baking release agent (recipe: • video). Put the lid on and leave to rest for 60 minutes. If you don't have a Roman pot, take a loaf pan and cover it with aluminum foil folded twice. After it has rested, spray the dough with water, dust with flour and cut into it. Put the lid on, place on the lowest rack in the COLD oven and bake for 45 minutes at 240°C. Reduce the temperature to 200°C, remove the lid and leave to brown for a further 10 minutes.
