Instagram: / carla__caspary Facebook: / healthyfoodhealthymood Ingredients: 15 apples Lemon 1-2 tsp cinnamon 1 tsp vanilla bean powder 1/2 tsp ground cardamom 1 cup raisins 1 half cup rum 1-2 tbsp agave syrup Preparation: For preserving, I use tulip jars (580 ml) with a rubber seal and two metal clamps. Jars, rubber seals and metal clamps are first placed in boiling water for 10 minutes and boiled until germ-free. Then they are removed from the water with tongs and left to drain on a clean kitchen towel. In the meantime, wash the apples. Only fruit that is in perfect condition should be used, i.e. with no rotten spots. Now peel the apples, quarter them, core them and cut them into small pieces. Put the chopped apples in a bowl of lemon water so that the apples do not turn brown. For the lemon water, squeeze a lemon and add a little water. It is important to always mix the apples well with the water. Now soak the raisins in rum for a few minutes. Add cinnamon, vanilla bean powder, raisins with rum, cardamom and, if desired, a little agave syrup to the apple mixture. Now stir the mixture thoroughly and then pour it into the jars, ideally using a funnel. If you don't have a funnel, you should later wipe the edges of the jar with a clean cloth. When filling the jars, press the apple mixture together well in the jar. But leave at least 2 cm of air in the jar up to the edge. You should pay attention to this distance, as the food also cooks when it is being preserved, i.e. it needs enough space and could otherwise burst. Now get a glass lid, put a rubber seal on it and put it on the jar. Use two metal clips to attach the lid. Make sure that the clips do not touch the tab of the rubber and that the rubber ring is not twisted at any point or extends beyond the edge of the jar. Both metal clips should also be placed opposite each other to ensure the jar is properly sealed. Now place the jars with the room temperature preserves in a saucepan or a preserving machine. If you are only making a small amount of preserves, a saucepan is ideal. Now place an old tea towel in the pot. This acts as a buffer between the pot and the jars and prevents the jars from being damaged or falling over in the boiling water. It is important that there are no temperature fluctuations. This means that if you are preserving the room temperature preserves, you should also fill the pot with room temperature water so that three quarters of the jar is covered with water. Now set the stove to the highest setting. The preserving time only begins when the water temperature is around 90 degrees. Only then are the apples in the jar boiled for 30 minutes. The heat causes the air in the jar to expand. When it cools down, it contracts again, creating a strong vacuum. This negative pressure presses the lid firmly onto the jar so that the contents are protected from external influences and contamination. After the boiling time, carefully remove the jars with a cloth and let them cool on a kitchen towel at room temperature. Alternatively, you can carefully pour the water out of the pot before removing the jars and then remove the jars. After cooling, you can remove the metal clips from the jar. If the lid now sits firmly on the jar, you have done everything right and the preserved goods will last for at least a year or even longer.
