I cook this dish for my family at least every two weeks. It has become an integral part of my recipes. This creamy pasta dish takes less than 20 minutes to make. Use this recipe and enjoy: Recipe: 4 tablespoons olive oil from dried tomatoes 1 shallot 4 cloves of garlic 1/2 red chilli Fresh oregano, thyme and basil 80 ml dry white wine 80 ml chicken stock or vegetable stock 200 g mascarpone 1 can chopped tomatoes 8 dried tomatoes 15g grated Parmesan + chopped basil Salt and pepper 150 g rigatoni Basil, Parmesan as a topping Crush 4 cloves of garlic, peel them and cut them into thin slices. Heat 2 tablespoons of the oil from your dried tomatoes and add the garlic. Also cut a shallot into thin rings and add it. Now comes the point where we take everything to a different level, tomato-wise. To do this, chop a whole handful of dried tomatoes and half a chilli pepper and add that too. Deglaze the whole thing with white wine and let it reduce completely, otherwise the mascarpone will flake later. Also cut 2 sprigs of thyme and a handful of basil leaves and oregano and add the sundries too. Now fill it with chopped canned tomatoes and a little vegetable stock. Season your sauce with 2 pinches of salt, a little pepper and a pinch of sugar. Now add the mascarpone and you have this incredibly creamy sauce. Finish it off with a little grated parmesan and fresh basil. Meanwhile, cook your pasta al dente. I love rigatoni for this dish, but you can eat your favourite pasta with it.
