With extra cheese! In my opinion, this pizza style is one of the best in the world and it's also super practical to make at home. All you need is a high pan or baking tin. The goal: airy, crispy and with a perfectly gratinated cheese edge. Recipe: Dough 280 g water 425 g flour 7 g dry yeast (1 packet) 20 g olive oil 10 g salt 5 g sugar Topping 150 g grated mozzarella 150 g butter cheese slices 300 g spicy salami Jalapeños Tomato sauce 800 g pelati tomatoes 2 onions 3 cloves of garlic 3 tbsp olive oil 1 tbsp tomato paste Salt, pepper, sugar, basil, thyme Instructions: Mix lukewarm water with the yeast and sugar and put in a food processor. Add the flour and salt and knead for about 7-8 minutes. When the dough has a good tension, we add the olive oil and knead everything until we have a smooth and elastic dough. Cover the dough with a damp kitchen towel and leave to rise until it has doubled in size. Then place it on a well-oiled baking tray and stretch it out a little. When the dough can no longer be stretched, cover it again and let it rest for 15 minutes. Stretch the dough out again and spread it over the entire baking tray. For the tomato sauce, we cut the onions and garlic into small cubes and sweat them in plenty of olive oil. Then add the tomatoes and fill with pelati tomatoes. Season with spices and reduce to a thick sauce. First top with cheese, then sauce, then salami and more cheese :).
