INGREDIENTS: For the dough: 500gr all-purpose wheat flour = ½ kilo = 25 tablespoons 250gr unsalted butter = 12 tablespoons 1 egg 110gr sugar = ½ cup = 6 tablespoons Grated peel of 1 lemon A pinch of salt Cold water as needed 1 26 or 28cm diameter tart pan greased with butter or oil For the filling cream: 2 cups milk = ½ liter = 500ml = 40 tablespoons 2 eggs 110gr sugar = ½ cup = 6 tablespoons 3 tablespoons cornstarch = 45gr 2 lemon shells DOUGH PREPARATION: In a large bowl add the flour, sugar, pinch of salt, butter, egg and grated lemon peel, start kneading until it becomes a grainy sand. Add 1 or 2 tablespoons of water little by little only if you feel that the dough is too dry and knead until the dough is moldable, place on the counter and knead for only 1 minute, until you obtain a homogeneous dough, wrap in plastic and store in the refrigerator for 30 minutes. PREPARATION OF THE CREAM: We put the milk in a pot, add the eggs, sugar and starch (cornstarch) to the milk, mix very well and add the lemon shells, mix, bring to the fire and always mixing and over medium-low heat let it begin to boil and thicken, let it boil for only 30 seconds always mixing, once it is very thick remove from the heat remove the lemon shells, let cool and use.
