Swallowed up by Thai, Chinese and Japanese cuisine, Vietnamese cuisine has long been the great forgotten of Asian gastronomy, but is finally asserting itself among its neighbors. Proof of its richness, if any were needed, the Michelin guide has just published its first 100% Vietnamese work. Four chefs have been awarded a star. Some dishes are now essential in France: the traditional Phô soup, or the Bahn-Mi sandwich and, of course, spring rolls which were created not far from Hanoi, around 1740.
