Here is the recipe: 1 soup chicken (an old laying hen weighs around 1.5-2 kg) 1 soup green 2 sticks of celery 1/2 bulb of ginger (palm-sized) 1 onion 2 cloves of garlic Spices: 1 star anise 15 peppercorns 15 fennel seeds 25 coriander seeds 5 juniper berries 3 bay leaves Optional: lovage Soup garnish: 1 carrot 150 g alphabet noodles Spring onions (only the green part) Parsley Instructions: Wash the soup greens and cut into 2-3 cm pieces. Halve the ginger and onion, brush the cut sides with a few drops of neutral cooking oil and then roast them in a hot pan until the cut sides are dark brown. Just before the end, add the spices (except the bay leaf) and also roast for 1-2 minutes. Turn off the stove and put all the spices, onion and ginger, along with the chopped vegetables and chicken, into a large pot. Crush the garlic with the flat side of a knife and add it too. Fill the pot with enough water to just cover everything. Put your chopped vegetables, all the spices, the crushed garlic and the chicken into a large pot and just cover everything with water. Bring everything to the boil, turn the heat to the lowest setting and let the soup simmer for at least 3 hours. The soup should never boil, but only simmer gently. After 3 hours, remove the chicken, remove the breast, leg and wings and carve the breasts. Cartilage, skin and bones can be discarded. The required amount of broth can be poured into a pot and reheated. Season with a good pinch of salt. For the garnish, dice the carrot and finely chop the parsley. Tear the chicken into pieces and now add everything to the broth, including the alphabet noodles. Cook everything for 5-10 minutes and keep warm. Finally, season the broth with salt and pepper and serve with more chopped parsley. #chickensoup #soup #recipe Website: https://brotmitei.de/ All recipes - online cooking course - food tours through Berlin - and much more can be found here: / brotmitei You can find my equipment for the kitchen here: https://brotmitei.de/shop/ The links above are affiliate links.
