Prepare the dough. In a bowl, collect the wholemeal flour. 2. Dissolve the salt in a little hot water, then add the liquid to the flour, together with the extra virgin olive oil. 3. Before kneading all the ingredients, prepare a solution by mixing the baking soda with a spoonful of wine or apple cider vinegar. Did you know that… Baking soda, in contact with vinegar, reacts by helping the dough rise during cooking: the consistency of the piadinas will be softer. The wine or apple cider vinegar will not be noticeable in the piadinas. 4. Knead all the ingredients until you obtain a soft, non-sticky dough: if the dough is too soft, add more flour. 5. Wrap the dough in cling film and leave to rest for half an hour, to help roll out the piadinas. 6. Once the resting time has elapsed, divide the dough into 4 parts and, using a rolling pin, roll out each ball obtained until it forms a very thin piadina with a diameter of about 15-20 cm. 7. Place a non-stick or stone pan on the heat and, when it is very hot, cook the piadinas (it is recommended to sear the piadinas for 1 minute per side). The right idea You can prepare many piadinas in advance: pre-cook them in a pan, searing them for one or two minutes, and store them in a tea towel to keep them soft. When you're ready to serve them, just heat them slightly and stuff them with the ingredients you like best! 8.
