Today I'm going to show you my favourite & healthy Christmas recipes or anti-inflammatory comfort food, which I like to prepare on a Sunday or public holiday! Maybe my recipes will also inspire your Christmas dinner - I will be cooking all of the recipes on Christmas Day????????. We'll be preparing the following recipes together today: gluten-free pancakes with raspberries for breakfast, cream of zucchini soup as a light lunch & lemon roast chicken with root vegetables and sweet potatoes for dinner. Hot chocolate recipe: • CHRISTMAS DECORATION 2024 ???????? Decorated with... RECIPES ???? Gluten-free pancakes (for 1 portion) -90g chestnut flour -80ml cashew milk (or any other milk) -2 eggs Mix the ingredients and fry in coconut oil. For toppings, I warmed up frozen raspberries and used a little maple syrup. ???? Cream of zucchini soup (for 2-3 portions) -1 onion -2 zucchini -3 cloves of garlic -200ml coconut milk -0.5l water Cut the vegetables into small pieces, fry briefly in olive oil, then cover with 0.5l water and simmer on a low heat for 10-15min (until the zucchini is soft). Puree and add coconut milk. Top with nuts and seeds. ???? Lemon Roast Chicken (serves 4) Based on this recipe: -https://cookingformysoul.com/dutch-ov... However, I use olive oil instead of butter (so it's anti-inflammatory) & sweet potato instead of potato.
