In this episode, Quarks looks at what really makes good bread and how to best store it. Bread is part of most Germans' daily menu. But we have all been annoyed by bread that quickly goes moldy or dries out. That's why Quarks tests common methods of storing bread in this episode, for example. Many years ago, different types of bread were created that are still around today. Depending on the ingredients, each bread requires a different method of preparation or certain factors when baking or resting. But all bread has one thing in common: they need enough kneading time so that the gluten proteins can combine to form a kind of network and the bread dough remains elastic. This makes the bread nice and fluffy after baking and allows it to rise during the baking process. Bread is available as both white bread and wholemeal bread. The latter is considered healthier, but is it really the case that white bread is the unhealthiest bread? The fact is, however, that coarse wholemeal bread generally keeps you full for longer than other breads.
