Dough - 1.Dissolve the yeast in the milk, preferably in a bowl for your assistant. 2. Add the remaining ingredients (START WITH SAFFRON) and work together into a smooth dough. (20 min at low speed in your kitchen assistant or as long by hand) 3. Turn the dough onto a lightly floured bench and roll it out into a large rectangle. 4. Spread the filling and fold the dough into three folds. 5.Cut approx. 3 cm wide strips of the dough. then divide it into three strips of equal size, but save about a cm at the top. then braid the bun and roll up. 6. Place on plates and let rise until doubled in size, for approx. 2 hours at room temperature. 7. Set the oven to 225°C over/under heat and bake the buns in the middle of the oven for approx. 12 minutes, until they are golden in color. 8. Remove from the oven and let cool slightly before brushing them with melted butter and dipping them in caster sugar. 9. Then let cool completely on a cooling rack.
