INGREDIENTS: Floury potatoes (cook with the skin on, store in a sieve uncovered in the fridge for 2 days so that the moisture can escape from the potatoes. Only then peel them. You should then have about 800 g peeled potatoes. 250 g fine durum wheat semolina (or semolina) 125 g potato starch 60-100 g Parmesan (grated, in the TM for 10 seconds, level 8) 4 egg yolks 1 - 1.5 tsp salt 1/2 tsp white pepper a good pinch of nutmeg Put the peeled potatoes through a potato press into a larger bowl. If you notice that the gnocchi are still too soft and cannot be formed properly, simply add a little more flour, knead for 1 minute and then eject again. If you scrape them, Just roll it briefly with your fingers as shown in the video and shape it into the gnocchi shape. Do the same with the rest of the mixture. Put the gnocchi in boiling salted water and cook until they all float to the surface. Put them in a sieve, rinse briefly and drain. Either serve as is or fry (which is what I prefer).
