To cook a hare stewed in sour cream, we will need the following ingredients: • a hare carcass weighing 2.7 kilograms; • 2 onions; • 1 carrot; • 6 cloves of garlic; • 1 teaspoon ground coriander; • 2 bay leaves; • 3 heaping tablespoons of flour; • 350 grams of sour cream with a fat content of 20%; • 1 glass of boiling water; • vegetable oil; • salt to taste; • freshly ground black pepper to taste; • fresh parsley for decoration. 1. Prepare the necessary ingredients: defrost the hare carcass in the refrigerator, peel the onion and carrot. 2. Soak the hare carcass in cold water for 4 hours, then pat dry with paper towels. Remove the films and entrails and cut the hare into portions: first, cut off the front legs at the joints and divide them in half, then separate the hind legs and then the ribs and the remaining parts. 3. Rinse the meat in cold running water until blood stops appearing in it. 4. Throw the hare in a colander and let the excess water drain. 5. Cut the carrots into large slices, the onion into large cubes. 6. Place the cauldron on the fire, pour in vegetable oil and heat it up. 7. Fry the hare in hot oil until golden brown. 8. Place the cooked meat on a plate. 9. Wash the cauldron, set it on medium heat, add the fried hare and pour in a glass of boiling water. 10. Cover the cauldron with a lid and simmer the hare over medium heat for 15 minutes. 11. Pour flour into a deep bowl, add sour cream, add salt and pepper to taste and mix thoroughly. The base for the sauce is ready. 12. Add salt and freshly ground black pepper to taste, bay leaf and prepared vegetables to the cauldron. 13. Cover the cauldron with a lid and simmer the dish for 15 minutes. Do not stir the ingredients. 14. Add garlic cloves (cut large ones into 2-3 pieces, leave small ones whole) and ground coriander, mix and add sour cream with flour and spices. Spread the sauce evenly over the surface and, without stirring the ingredients, simmer the hare over medium heat for 35 minutes, covering the cauldron with a lid. 15. Stir the ingredients and cook the dish for 10 minutes without a lid. The hare stewed in sour cream is ready. Place the finished hare on a plate, sprinkle with freshly ground black pepper to taste and garnish with finely chopped fresh parsley. Choose a side dish as desired; serve the dish hot. Enjoy!
