Wrap the tofu in paper towels and drain. Slice the carrots into 5mm thick chrysanthemum shapes. Peel the daikon radish and cut into 5mm half-moon shapes. Thinly slice the caps of the shiitake mushrooms and finely tear the stems by hand. Chop the green onions into 1cm pieces. Cut the konnyaku into bite-sized pieces 5mm thick. ② Parboil the konnyaku and drain. *Boiling in water until it boils is fine. ③ Add sesame oil (1 tablespoon) to a frying pan and fry the burdock, taro, daikon radish and carrot over medium heat, then add the parboiled konnyaku and stir fry together. Once the oil is absorbed, crumble the tofu with your hands and add it, stir fry lightly, then add the shiitake mushrooms and spring onions and stir fry briefly. ④ Add A and bring to a boil, then reduce heat to low and simmer for about 10 minutes. If you are concerned about any scum, remove it, taste and adjust the seasoning with salt (a little). ⑤ Place in a serving dish and sprinkle with black pepper.
