Moist chocolate cake preparation time: 20 minutes + 30 minutes baking time: 8 servings • 180 grams of chopped 70% cocoa chocolate (you can mix half 70% and half 50% milk) • 170 grams of cold unsalted butter • 50 grams of dark cocoa powder • 150 grams of sugar • 4 eggs • 1 teaspoon of vanilla essence • 1 pinch of salt 20 cm loose-bottomed pan METHOD Before starting to prepare, line a 20 cm loose-bottomed pan with parchment paper and grease with butter and cocoa powder. If you do not have a loose-bottomed pan, the cake can be made in a fixed-bottomed pan or ovenproof dish, but the cake must be served inside the pan. The batter is very wet and delicate, so you will not be able to unmold it. Preheat the oven to 180ºC. Melt the chocolate in a bain-marie with the butter: In a glass bowl, place the butter first and the chopped chocolate on top. Place the bowl over a pan of boiling water. The bowl needs to be larger than the mouth of the pan so that it can rest on top of it, and it doesn't need to touch the water. The steam will ensure that the ingredients melt. Once the chocolate has completely melted, add the vanilla, mix and set aside to cool. While the chocolate cream is cooling, separate the egg yolks from the whites by placing the whites in a larger bowl and the egg yolks in a smaller bowl. Beat the whites with a hand mixer or a stand mixer. When they start to thicken/set, add a pinch of salt. Beat a little more and add the sugar. Continue beating for approximately 2 more minutes or until it reaches the consistency of meringue (firm peaks). Set aside. Add the egg yolks to the chocolate cream, mixing with a whisk and add the cocoa powder. Add half of the meringue to the chocolate cream, mixing carefully and lovingly with a spatula. Add the other half of the meringue, mixing gently until incorporated. Transfer the cream to the chosen pan and bake for 30 minutes in a preheated oven at 180ºC. The oven must be very hot for the cake to cook properly.
