VEGAN MAY DAY (vegan donuts, drop breads...) ➜ • VEGAN MAY DAY 〰️ Vegan asparagus and potato salad • 1 kg firm potatoes • 1 bunch asparagus • 2 apples • half a cucumber • 2 spring onions • radishes Sauce • 1 oat fraiche (Oatly/Yosa) • 1 dl vegan mayonnaise • 2 dl relish • 2 garlic cloves • 0.5 dl Mustard • lemon juice • salt • pepper 1. Peel, chop and boil the potatoes. Set aside to cool. 2. Cut off the hard ends from the asparagus. Peel the asparagus. Boil them for a few minutes. 3. Chop all the ingredients and mix the potato salad. 4. Then make the sauce. Chop the garlic and then add the rest of the ingredients to the bowl. Mix and season with salt and pepper at the end. 5. Stir the sauce into the potato salad and let it set in the refrigerator. Vegan sausage rolls • 1 pack of BonVegan vegetable sausage rolls • Sunday tart & puff pastry sheets • oat or soy drink for greasing 1. Preheat the oven to 225 degrees. Place the dough sheets on baking paper to melt. 2. Cut the sheets into two squares. Halve the sausage rolls. Roll the sausage rolls inside the dough sheets. Make sure the seam is facing down. 3. Grease the sausage rolls with, for example, oat drink and bake in the oven for 10-15 minutes. 4.
