Ingredients (22cm / 8.6in diameter mold): Pastry cream: ???? 500ml milk (2 cups) ???? 4 large egg yolks ???? 120g sugar (½ cup) ???? 30g all-purpose wheat flour (3 tbsp) ???? 20g cornstarch (2 tbsp) ???? A splash of vanilla essence Sponge cake: ???? 3 large eggs ???? 300g all-purpose wheat flour (2 cups) ???? 2 sugar-free natural yogurts (250g / 1 cup) ???? 1 sachet baking powder (15g / 1 tbsp) ???? Zest of 1 lemon ???? 150g sugar (½ cup + 3 tbsp) ???? 80 ml sunflower oil (⅓ cup) ???? Recipe for Tarta Nua (or Italian custard cake), step by step: 1️⃣ Prepare the cream. In a saucepan, heat the milk. In a bowl, mix the yolks with the sugar and vanilla essence. Then, add the flour and mix again. Add the cornstarch. When the milk is hot, pour a ladle of it over the mixture and stir until combined. Add a second ladle. Now you can add the rest of the milk while stirring constantly. 2️⃣ Pour the entire mixture back into the saucepan. Cook over low heat, stirring constantly, until you see that a thick but still fluid cream is created. Strain the cream into a bowl to remove any lumps. Cover it with cling film, making sure it is in direct contact with the surface to prevent a crust from forming. Let it cool completely. 3️⃣ Prepare the cake. In a bowl, beat the eggs and sugar with your electric beaters for a couple of minutes, until they are foamy. Add the yogurts and beat until they are integrated. Add the oil in a thin stream while beating. Add the lemon zest and mix a little. 4️⃣ Mix the flour with the baking powder and add it in several batches and sift it into the mixture. 5️⃣ Pour the batter into the mold, previously lined with greaseproof paper on the base and sides. 6️⃣ The cream is now cold. Remove the film and beat it for a minute with the electric beaters to make it creamy. 7️⃣ Distribute several tablespoons of cream on the surface of the cake batter. With a skewer, make some tornado-shaped grooves in each pile. 8️⃣ Bake at 180 ºC (350 ºF), with the oven preheated, for 45 minutes. Let it cool on a rack. When serving, sprinkle a little icing sugar on top. ???? Notes for making the Italian Nua Cake recipe: ????To make the cream, you can use only flour or only cornstarch. I like the result of the combination of both, but make it however you like. ????You can use a 24 cm mold. In this case, it will be ready after 40 minutes of cooking. ????After 30 minutes, if you see that it is browning too much, you can cover it with aluminum foil for the rest of the cooking process.
