Fermentation is one of the oldest methods of preserving food. There is evidence that the Babylonians used this process over 7,000 years ago. Fermented foods stimulate the growth of beneficial bacteria in the intestines and thus support a healthy intestinal flora. But fermented foods can do even more for our bodies. Scientific studies in recent years have strengthened the assumption that some secondary plant substances, which are also released during fermentation, have a health-promoting effect on humans: for example, they are said to protect against various types of cancer and prevent the growth and spread of pathogens such as viruses, bacteria or fungi. They are also said to have anti-oxidative, cholesterol-lowering, antithrombotic, anti-inflammatory, detoxifying and immunomodulating effects. In this conversation, our guest Karl Müller reports from his own experience on the great effect of fermented foods on our health and in particular on osteoarthritis. But even in our movements we no longer meet the natural demands of our skeleton and this encourages the development of degenerative processes such as arthrosis. The human musculoskeletal system has developed its upright gait by walking barefoot a lot and having to adapt its foot to the usual natural unevenness. This means that the skeleton constantly adjusts to the feet and remains flexible and supple. Today we walk on asphalt and inflexible floors, with thin soles and our entire body is exposed to the blows. In addition, long periods of sitting and poor posture lead to shortened tendons, ligaments and stuck fascia. But there are ways and means of offering the body a natural base in everyday life and thereby initiating regenerative processes in the body.
