Hello everyone, welcome to another episode on my channel! Today we will prepare one of the most popular Czech classics together – tripe soup. It is a dish that may not appeal to everyone, but whoever tastes it once, prepared honestly, will fall in love with it. So let's get to it! Ingredients we will need: The main star of today's recipe is, of course, beef tripe. To do this, we will prepare onions, a little lard for frying, cumin, chili, tomato puree, marjoram, garlic, ground paprika, beef broth and finally, we will thicken the soup with roux. Preparation method: We will start by frying the onions with cumin in lard. Fry them nicely until dark, because this is what will give the soup a great taste and color. Then we will add the tomato puree and pressed garlic – let them fry together for a while to release their aroma. Finally, add the ground paprika, which we only stir briefly to prevent it from becoming bitter. Now it's time for the liquid part. Add the broth from the pre-cooked tripe and a little beef broth to the pot. Season well with salt and pepper and add our chopped tripe. Thicken the soup with the stock, mix well and let it simmer thoroughly to get a beautiful consistency. Finally, season it with marjoram, chili, salt and pepper, to taste. And it's done! Serve the soup on a plate, add a fresh roll and a chilled beer. And this, friends, was my honest tripe soup.
