If you don't want to use eggs, make 300 gr of flour with 160 ml of water. Let the pasta rest well covered while you prepare the filling. The filling In a bowl put the ricotta, add the crumbled mozzarella, salt and pepper, parsley and parmesan. Mix well. Filling ready. To prepare ravioli or tortelli you must first "roll" the dough. Using a pasta machine, start by passing a piece of dough of about 100 grams through the rollers. Pass the dough through the largest roller 4 times, folding it each time so that it becomes smooth, then pass it through only once for each thickness until it reaches a thickness of one millimeter. Try not to use flour to roll out the dough or try to use very little. Using a pastry cutter or a glass, make circles with a diameter of 7-8 centimeters, put a teaspoon of filling in the center, if the dough is very floured you will first have to wet it slightly on the inside with water and a brush so that the edges stick together easily. Once you have placed the filling in the center you will have to press the edges so as to enclose the filling and create a filled half moon. Go over the edges again. Now you can decide to leave them like this or turn them into tortello. To turn it into a tortello, simply fold the ravioli so that the two ends touch and with light pressure join the two ends. Place the ravioli or tortelli on a floured tray. The potato sauce In a pan, put about 20 g of butter and less than half a finely chopped onion. Brown. Add a small potato per portion that must be cut into very small cubes. Brown and then moisten with a glass of pasta water that you will have put on the stove in the meantime. Salt the potatoes and the water. A little pepper and a sprig of rosemary. Leave to cook for 10 minutes, if it dries out add a little more water. Cook the tortelloni or ravioli, the cooking time will be between 5 and 7 minutes, this depends on the type of flour you used and the thickness, so taste the tortelli while cooking. Mix the tortelli with the potato sauce. If you like, add some cheese and chopped herbs of your choice.
