A dessert that doesn't require any cooking and has an extraordinary flavour and quality, of Italian origin and one of the most famous desserts in the world. This is my version so you can prepare it with confidence that there are no raw eggs and that it will be a dream dessert, a total success and you will love it. INGREDIENTS: 400gr of template cookies, champagne, ladyfingers, vanillas, ladyfingers, etc. FOR THE COFFEE SYRUP: 2 cups of strong coffee = 500ml = ½ litre 5 tablespoons of rum or coffee liqueur, Marsalla or Port wine FOR THE EGG AND CHEESE CREAM: 3 eggs ½ cup of sugar = 110gr ½ cup of milk = 125ml 1 teaspoon of vanilla essence 200ml of whipping cream 500gr of mascarpone cheese or cream cheese. Cocoa powder to taste, to sprinkle Rectangular mold of 30 x 21cm or square of 26cm PREPARATION: Prepare the coffee and while it is still very hot add the liquor you are using, mix well and set aside. Beat the eggs very well with half the sugar, vanilla and milk, bring to a boil over low heat, stirring constantly until it takes on a creamy consistency, remove from the heat and let cool for 1 hour preferably in the refrigerator. In a bowl, mix the cream with the other half of the sugar and beat well until it forms a chantilly. Once the egg cream is cold, add the mascarpone cheese or cream cheese, mix well until it forms a homogeneous cream, then mix with the chantilly carefully, to keep the oxygen in the cream. ASSEMBLING THE TIRAMISU: start by placing a thin layer of cream on the bottom of the mold. Soak the cookies preferably 1 by 1 quickly just enough so that they absorb coffee but not in excess because they can melt and begin to distribute them in order one next to the other on the layer of cream at the bottom of the mold until the bottom is completely covered with cookies. Place another layer of cream. Start placing cookies soaked in coffee again, until all the cream is covered. Cover the cookies with cream, put them in the refrigerator for at least 4 hours to cool well and finally when it is cold sprinkle with cocoa powder and if you want you can make some decoration and it is ready to eat.
