It was previously classified as a goosefoot family (Chenopodiaceae), which is now included in the Amaranthaceae. Like fodder beet and beetroot, it is a cultivated form of the common beet (Beta vulgaris subsp. vulgaris). It is descended from the wild beet (Beta vulgaris subsp. maritima) and has been bred to have a greatly increased sugar (sucrose [table sugar]) content. The sugar content is 18 to 20%. The sugar beet is the most important sugar plant in temperate latitudes. Sugar production produces by-products that are used as animal feed or substrate for fermentation. Sugar beet is becoming increasingly important as a renewable raw material, e.g. for the production of bioethanol[2] and biogas.[3] The sugar beet is a biennial plant that is cross-pollinated. It only forms an inflorescence and seeds in the second year. In the first year, in the vegetative stage, it develops a rosette of leaves above ground with around 20 broad, up to 30 centimetres long leaves, and the root thickens into a white beet body. The sugar beet is a taproot plant, and its roots can reach up to one and a half metres deep into the ground. Harvesting takes place in the first growing year, as this is the period in which reserve substances are stored and the sugar content, which determines the economic benefit, is at its highest. At harvest time, the beet weighs between 700 and 1200 grams. The highest sugar content is concentrated in the middle part of the beet. In the second year, the generative phase, a branched inflorescence with inconspicuous five-petaled flowers develops, about 1.5 meters high. Late frosts or longer periods with temperatures between 0 and 8 °C after sowing can cause vernalization in the first year, which leads to the undesirable bolts.[4] These have a disruptive effect on mechanical harvesting and cause lower yields, as the beet bodies remain small and thus produce a low sugar yield. As they also leave several hundred germinating seeds in the soil, which can survive in the soil for a long time without losing their ability to germinate, they also endanger future beet cultivation on the same area. They must therefore be removed before flowering. Sugar beet is mainly cultivated in temperate climates. It is mainly grown in Europe, but it is also grown in the USA, Canada, North Africa and some Asian countries. In Europe, it is grown from Finland to the Mediterranean countries. Unlike in Central and Northern Europe, sugar beet is not sown in the spring in Mediterranean countries, but in October and November. The harvest then takes place in the following summer. To achieve a high yield, sugar beet needs moderate temperatures, plenty of light, a constant water supply and deep, nutrient-rich soils with good drainage. Sugar beet's water requirements are particularly high in July and August. In its early stages, the plant is sensitive to frost; night frosts below -5 °C cause the plants to die.
