The process of making pig's feet in a large-scale pig's feet factory is done one by one by hand through the hands of many people. It is not easy to endure the heat of the pig's feet factory that operates from 2 a.m. It is said that the only way to breathe is to briefly get some air under the blower in the factory. However, the workers have to endure the heat like a steamer in order to make the perfect pig's feet. The pig's feet are soaked in water for 18 hours to remove the blood, and after the preprocessing process, they are completely frozen at -18℃ before starting work. In order to cook the pig's feet evenly in a large pot, it is basic to turn them over once every 10 minutes, and it is also essential to carefully measure the salinity and temperature of the broth and trim any bruises or wounds on the pig's feet. In the process of making pig's feet, a keen eye and meticulous and quick hands are absolutely indispensable abilities. Not only is it hot inside the factory, but they say that their wrists and shoulders hurt every day because they work with 5,000 to 6,000 pig's feet, each weighing about 2 kg.
