Freezing technology is one of the most important inventions in the food industry. It means that fresh food has a long shelf life and is available all year round. Two frozen products end up on people's plates particularly often in the north and are also produced in northern Germany: frozen spinach and fish fingers. Farmer Andre Wohlers from Langförden also grows the delicate vegetable. The best time to harvest spinach is right after sunrise. As soon as the spinach leaves are cut, a race against time begins so that they don't wilt. Delays in harvesting therefore quickly become a risk: the spinach has to be delivered, processed and frozen within a few hours in order to become a delicious and healthy side dish. Andrea Rohde is responsible for quality at ELO-Frost, a frozen food company in Vechta. Her company processes several thousand tons of spinach every year, straight from the field.
