It is a traditional food made and shared on special days such as weddings, holidays, and birthdays. Another traditional food, samsa, is baked in a hot clay kiln called tandoor, which is over 100℃. Since it is a food enjoyed by people of all ages, more than 3,000 pieces are baked every day. Let's meet people who sweat to make delicious food in Uzbekistan. Plov, the representative traditional food of Uzbekistan! A large restaurant located in the capital city of Tashkent. Here, they make a large amount of plov that can feed 800 people at once. Plop is a representative dish of Uzbekistan, similar to our country's fried rice, made by finely chopping meat and vegetables and frying them in oil. Making a large quantity of plop starts with preparing the ingredients. The most difficult part is preparing the meat. The amount of lamb and beef in one pot is over 150~200kg. The meat cut into appropriate sizes must be tied with string so that it does not lose its shape after being fried in oil. After preparing the ingredients, heat the pot with firewood and pour sunflower oil. Then, add meat, vegetables, and various spices and cook for about 3 hours. The amount of ingredients used at this time is about 350~400kg, including 100kg of rice, so mixing the ingredients together after cooking is no easy task. - Another traditional food, samsa, more than 3,000 pieces are made in a day! On the other hand, in Tashkent, you can often find restaurants serving another traditional Uzbek food, samsa. Samsa is an Uzbek-style dumpling made by rolling out wheat dough thinly, adding various ingredients, and baking it in a hot clay kiln, called a tandoor. Depending on the type, the ingredients and shape of the samsa vary. It is said that the shape is to distinguish the various ingredients in the samsa. A restaurant in Tashkent makes 3,000 to 3,500 samsa with various fillings such as beef, potatoes, mushrooms, and vegetables a day. Since the amount made in a day is so large, the work of preparing the ingredients and rolling the wheat dough with a rolling pin is done without rest. The core work of samsa is baking it in a tandoor kiln! In order to attach the dough made with fillings to the walls of the kiln one by one, half of the body has to be inside the kiln. Attaching the dough in a kiln that is over 100℃ is not an easy task. However, it is said that it is rewarding when people enjoy the food.
