COOKING PROCESS COOKING: Line a 22cm springform tin with baking paper. Spread out the filo pastry and cover with damp paper to prevent it from drying out. Grease each sheet with melted butter, fold and crease like a fan and roll up. Place in the centre of the tin. Repeat with each sheet of filo pastry and arrange around the previous one, from the centre outwards and in a circle. Bake at 180º C, top and bottom heat, for 10 to 15 minutes, making sure it doesn't burn. Meanwhile, for the flan cream, beat the milk with the nougat and bring to the heat. Meanwhile, beat the eggs with the sugar. When the milk begins to boil, pour it in a thin stream over the eggs, stirring constantly. With the filo pastry already baked, place the flan cream in a jug and pour it over the holes in the cake. Bake for 20 minutes at 180º C, but only at the bottom, until the cream is set.
