The most common types of grain in Central Europe are barley, rye, wheat, oats and corn. Since around 1985, triticale, a cross between wheat and rye, has also been cultivated. For thousands of years, grain was harvested by hand using a sickle, sifter or scythe when the grain was ripe. The mown grain stalks were tied together to form sheaves; several sheaves were then placed against each other in the field as a squat, house, doll or ladder for further drying and ripening. The mowing work was usually done by men, but binding the sheaves was women's work.[1] The sheaves were then brought to the barn and, after further storage, threshed either by hand or later by a threshing machine. Sometimes threshing took place directly in the field; if threshing could not be done promptly, the sheaves were placed in hives to protect them from the weather and vermin. With the development of the mower in the middle of the 19th century, manual work in mowing grain was very gradually mechanized, and development progressed to the reaper-binder that mows and binds sheaves at the same time. Depending on various factors such as the size of the farm and geographical location, however, the simpler grain mower or the grass mower modified with a hand lay-down continued to be used in parallel with the use of the reaper-binder. Sickles, scythes and scythes were also used to mow the fields, i.e. to mow the first clear strip around the field, in order to avoid grain loss and machine malfunctions. Today, however, grain is harvested almost exclusively with the help of combine harvesters in Central Europe. In one operation, these mow the grain, thresh it, clean the threshed grain and either lay the straw in a swath on the field or chop it and spread it evenly over the field to encourage rapid decomposition. In contrast to earlier methods, the combine harvester requires dead-ripe grain; however, the narrower harvesting window when the grain is dead-ripe due to the higher risk of the grain spoiling or growing is completely offset by the enormous power of the harvesting method. The older harvesting methods were almost completely replaced by the combine harvester in Germany in the 1960s. It is not just farmers who are involved in the grain harvest; the most important machine, the combine harvester, and its driver are often provided by a contractor. The start of the harvest is determined by the farmer by checking several factors and experience. The weather plays the biggest role here. Another factor is the moisture content of the grain. Other factors include, for example, the susceptibility of the grain variety (loss of quality, disease) or the ripeness of other crops that have smaller harvest windows. Some of these factors are already taken into account when planning cultivation (choice of variety, stock maintenance, etc.), others must be responded to as soon as they occur (threshing conditions due to weather or calamities). Harvest has always been the most intensive time for farmers because, as then, it is weather-dependent. In addition, it demands maximum logistical, entrepreneurial and work organizational skills from farmers, regardless of the size of their farm.
