In our search for the most iconic flavors of Guerrero, we arrived at the town of #Coapexco in the municipality of #Zitlala located in the Baja Mountains of our state. These towns are steeped in deep spirituality and mysticism, and their flavors have endured over time, remaining as current as in memorable times. One of the most representative dishes of this region is mole, but not just any mole, but rather the one reserved for truly special occasions, a dish that has been prepared for more than 500 years. This mole is made with red chili peppers and the chili seeds themselves, and is served with pípila (turkey) meat.
