Learn how to make fresh homemade pasta from scratch with a traditional Italian sauce to go with it. #NhacGNT #TemperoDeFamília #RodrigoHilbert Ingredients: For the dough: 1 cup of wheat tea 1 ½ cup of semolina tea ¼ cup of warm water 3 egg yolks 2 whole eggs Salt to taste For the putanesca sauce: 4 sardine fillets in can without spine. 350g peeled tomatoes 20g pitted black olives 4 cloves of garlic, peeled and chopped with a knife 1 onion, peeled and chopped julienned 1 tablespoon of sugar ½ cup of olive oil 1 seedless pepper 1 tablespoon of capers 6 tablespoons parmesan cheese Salt to taste Preparation: For the dough: In a bowl, place the wheat flour, semolina and salt to taste. Mix well and make a well in the middle. Add the yolks, whole eggs and water to the flour. Stir from the inside out with a fork until everything is mixed. Stir with your hands until you obtain a homogeneous mixture. Place on the counter and knead until smooth. Let it rest for 30 minutes covered with plastic wrap to activate the gluten. After this time, divide the dough into 2 equal parts and start rolling out the dough with a rolling pin. Once the dough is well stretched, place semolina on top of the dough and roll it up to cut into a tagliatelli shape. In a large pan, add plenty of water and bring to a boil. When it starts to boil, add the pasta and cook for 5 minutes or until it floats. Serve with your preferred sauce. For the sauce: In a medium pan, add the olive oil and heat until hot. Add the garlic, onion and chili pepper. Add the sugar, let it caramelize and add the sardines. In a bowl, mash the peeled tomato with a wooden spoon and add it to the stew. Add the olives, mix and let it cook for 10 minutes. Add the caper, mix and turn off the heat.
