Tafelspitz is an absolute classic, but far too few people dare to try it. We're going to change that now and at the same time show you the secret behind this Austrian recipe. You'll notice things that you didn't notice the first time and the dish will be much easier to make afterwards. ________________________________________________________________________________________ Here is the recipe: 1-1.5 kilos of boiled beef 2 carrots 1 piece of celeriac 2 onions 3 cloves of garlic ½ leek bay leaf, coriander seeds, peppercorns, juniper, allspice Horseradish sauce: 250-300 g boiled beef stock 25 g flour 25 g butter 6 tsp creamed horseradish 100 g cream Side dish: 2 carrots 200 g celery 800 g jacket potatoes 100 g Panko breadcrumbs 1-2 tbsp fat Instructions: Put the boiled beef in a sufficiently large pan and cover with cold water. We add our vegetables and spices whole. We now simmer our boiled beef on a low to medium heat for around 2.5-3.5 hours. When we pierce it with a meat fork and the boiled beef slides back down without resistance, it is ready. Take the boiled beef out and let it rest for a short while. For the sauce, we make a classic roux and gradually add our boiled beef broth. Using a hand blender, we mix everything well and add a little fresh cream and season everything with creamed horseradish, salt, pepper and nutmeg. For our vegetable side dish, we cut the carrots and celery into fine julienne strips and marinate with salt and sugar. Then we sweat the julienne strips in a little foaming butter. Cook the potatoes in salted water until done, peel them and glaze them in a little horseradish sauce. For the crunch, we roast some panko in rendered beef fat and put it on the potatoes.
