Ingredients: 12 chicken wings of 50 g, sweet paprika, cumin powder, garlic powder, salt and pepper; Sauce: honey, soy sauce, sweet and sour sauce, rosemary, juice of 1 lime, 300 g puree, 100 g mixed cheeses, 2 egg yolks, nutmeg Procedure: We squeeze the chicken wings, that is, we pass them over the flame of the stove in order to burn the last remaining feathers. We place the wings on the cutting board and sprinkle them with paprika, cumin powder, nutmeg, a little salt and pepper and massage them with our hands, in order to season them evenly. We cover them and leave them overnight in the refrigerator. The next day, we steam them (in a steamer or in a special pot) for 45 minutes. In the meantime, we prepare the sauce: in a bowl, we mix equal weights of honey, soy sauce, sweet and sour sauce (ready-made at the supermarket), the juice of 1 lime and the chopped rosemary. We mix. We place the steamed wings on a baking tray with baking paper and brush them with plenty of sauce. We put them in a hot, fan-assisted oven at 250° for 15 minutes. For the side dish, we slightly heat the leftover puree, then add the egg yolks, the grated mixed cheeses and a sprinkling of nutmeg. We mix everything and insert the mixture into a pastry bag with a ridged nozzle. On a baking tray with baking paper, we form our Duchess potatoes: tufts of dough. Cook in a hot, static oven at 250° for 15 minutes.
