Stuffed zucchini with yogurt, Lebanese style Ingredients: 2 ½ kilograms of zucchini 2 cups of Egyptian rice soaked for half an hour in hot water ½ kilogram of minced meat (you can use less meat) 1 tablespoon of seven spices 1 teaspoon of cinnamon 1 tablespoon of ghee Olive oil as desired 2 teaspoons of salt 8 cloves of garlic 2 tablespoons of dried mint For the yogurt: 2 kilograms of cow's milk 1 liter of water (4 cups) or half a liter if the yogurt is very runny 3 tablespoons full of cornstarch Preparation method: We hollow out the zucchini as shown in the video to prepare the filling. We soak the rice in hot water for half an hour and drain it. We mix all the filling ingredients: rice, minced meat, ghee, oil, spices and salt and mix well until it is ready. We stuff all the zucchini and the remaining filling can be cooked in the usual way of cooking rice. The filling reaches ¾ of the zucchini, no more. We put the zucchini in a pot, put a weight on them, cover them with water and put them on the fire until the water boils and leave them 5 to 10 minutes only, then drain the zucchini from the water to prepare the yogurt, beat the yogurt, water and starch well on the cold for 3-5 minutes without any heat to ensure a smooth and consistent texture. Put the yogurt mixture on the fire and stir until it boils. When the yogurt boils, add the garlic and dried mint frying (the frying is shown in the video), then add the zucchini gradually and leave the dish on a low to medium heat until the zucchini is fully cooked (from an hour to 3 hours). When the zucchini is cooked, do not leave it in the yogurt so that it does not disintegrate, and when we want to reheat it, we heat the yogurt and add the zucchini to it and add water to the yogurt if it is solid. Note: We add water to the yogurt (yogurt) at the same temperature, so if we want to reduce the consistency when it is boiling on the fire, we add boiling water to it, not cold water.
