Stuffed squid, a real delicacy. Ingredients for the filling: 3 large squid, cleaned and peeled, crumbs of a two-day-old roll, crumbled or coarsely grated (we used a 9-grain roll), half an onion, 1 clove of garlic, 1 tablespoon of pine nuts, a tablespoon of raisins, 30 g of grated parmesan, 1 egg, 1 salted anchovy, salt and pepper to taste, a pinch of lemon thyme, toothpicks to close the squid, (to give it an extra touch we also added 2 tablespoons of toasted breadcrumbs with garlic and anchovy that we already had ready). Ingredients for the sauce: squid tentacles cut into small pieces, half an onion, 1 clove of garlic, a little white wine, about 300 g of tomato sauce, a pinch of coarse salt, a pinch of chili pepper, EVO oil.
