Anja is studying nutritional science at the Hamburg University of Applied Sciences. She is currently in the second semester of her master's degree and is working on a product development project. The task: to mix a vegan drink snack like never before. A particular challenge: to use the new food cascara (coffee cherry peel). There are still very few tests on cascara in the food industry; cascara was only approved as a food by the EU in 2022. What will cascara taste like? Will the result be edible? But it's not just about developing a completely new food in the laboratory, it's also about developing a marketing concept for it and testing it sensorially. This involves tests and work for all study areas in the 2nd semester of the master's degree.
