Recipe for Thermomix® TM6, TM5, TM31: 8 pieces 190 g malt beer 180 g water 8 g yeast 8 g sugar 500 g spelt flour 630 (you can also mix wheat flour 550 and spelt) 12 g salt Put the malt beer, water, yeast and sugar in the mixing bowl. 3 minutes / 37°C / level 2 Add flour and salt. 3 minutes / dough level Transfer the dough to a bowl with a lid (see recommendation list below) and place in the refrigerator for 6-18 hours. Mine matured for 15 hours. After the proving time, preheat the oven to 240°C top / bottom heat. Place a bowl of hot water in the bottom of the oven or use the lava stones as described in the video. Take the dough out of the fridge, pour it onto a floured baking mat and continue working with it immediately while it is cold. Rub your fingers and the dough scraper with baking release agent. Recipe for baking release agent: • Video Now use your fingers to shape the dough into a rectangle without applying any pressure. Use the dough scraper to cut off 8 pieces and push them apart slightly. The dough is very sticky, but that is normal. Pull each piece of dough at the same time on the opposite sides and lay them on top of each other in the middle. Place on the baking tray and bake on the 2nd rack from the bottom for around 20 minutes. If you use lava stones to steam the rolls, pour hot water onto the stones when you put the tray in.
