Full wriiten recipe - Soya Chilli Dry Prep time: 20-25 minutes Cooking time: 15-20 minutes Serves: 5-6 people Ingredients: Crispy Soya Chunks SOYA CHUNKS 100 GRAMS GINGER 2 INCH (ROUGHLY SLICED) GREEN CHILLI 1 NO. (SLIT) SALT A LARGE PINCH SUGAR 1/2 TSP SOY SAUCE 1 TSP CORN FLOUR 3-4 TBSP Sauce OIL 2 TBSP GARLIC 2 TBSP (CHOPPED) GINGER 1 TBSP (CHOPPED) GREEN CHILLI 2 NOS. (SLICED) FRESH CORIANDER STEMS Coriander stalks A HANDFUL (CHOPPED) SPRING ONION BULB Spring onion white part A HANDFUL (ROUGHLY CHOPPED) LIGHT SOY SAUCE Light soy sauce 2 TSP DARK SOY SAUCE Dark soy sauce 2 TSP HOT WATER Hot water 150-200 ML VINEGAR Vinegar 1/2 TSP SUGAR Sugar A PINCH WHITE PEPPER POWDER White pepper powder A LARGE PINCH SALT Salt TO TASTE CORN FLOUR Corn flour 2 TBSP WATER Water 2 TBSP ONION Onion 1/3 CUP (PETALS) MIXED BELL PEPPERS Mixed capsicum 1/2 CUP (DICED) SPRING ONION GREENS Spring onion leaves A HANDFUL (CHOPPED) FRESH CORIANDER Green Coriander A HANDFUL (CHOPPED) Method: Set a stock pot with water over high heat & let it come to a boil, add ginger, green chilli, soy sauce, salt & sugar. Add soya chunks & let them boil for 5 minutes, meanwhile keep a large bowl with fresh water ready to rinse the soya chunks. Once boiled, strain the soya chunks & add them into the water & rinse them by stirring. Next, squeeze them gently (do no squeeze out all the water) & transfer them into a large bowl. Add corn flour a couple of tablespoons at a time & coat the chunks with it using a spatula or a spoon. Make sure you keep the oil ready at 170°C (moderately hot) before coating the chunks. Once coated fry the soya chunks in oil for a few minutes until crisp then strain them out into a sieve, fry in batches. Set a wok over high heat, add oil & let it get hot. Further add ginger, garlic, green chilli, fresh coriander stems, spring onion bulbs, stir well & cook over high flame for a few seconds. Add light & dark soy sauce, hot water, vinegar, sugar, white pepper, salt & bring the sauce to a boil. Mix corn flour & water in a bowl to make slurry & add it gradually into the sauce & thicken it. Lastly add the soya chunks along with all the remaining ingredients & coat well. Your delicious restaurant style soya chilli is ready.
