This takes up to two hours. The roughly chopped soup vegetables should simmer for that long until the finished vegetable stock is poured through a fine sieve and is ready for further processing or storage. DIY VEGETABLE PASTE INSTEAD OF PURCHASED GRANULATED BROTH We can shorten this process considerably by chopping vegetables together with spices in a food processor and adding salt. The result is a kind of vegetable paste that will keep in the fridge for weeks and can be used like granulated stock powder. The taste of the vegetable paste is only partially comparable to that of home-made vegetable stock, but it can still be used as a quick and easy alternative. THE WAY TO BONE BROTH FROM YOUR OWN KITCHEN ... takes a little longer than cooking vegetable stock. If you want to make a supply of this, chicken stock is a good choice. It adapts best to the different flavors of the soups you will later make from it, because it is less strong than beef or lamb stock. But these variants also have their flavor nuances and should not be underestimated. THE PERFECT BONE BROTH: RECIPE For the perfect bone broth, beef bones are roasted, usually for about half an hour in the oven to get the wonderful roasted aromas. Only then add liquid, vegetables, herbs and spices before cooking for several hours. For poultry broth, the bones and boned remains can be briefly fried in a pan, as can the vegetables. If you want the stock to remain light, you can skip roasting. Alternatively: a whole soup chicken. SO HEALTHY: BONE BROTH, CHICKEN SOUP, VEGETABLES AND LEGUMES Long-cooked chicken soup has been used in folk medicine all over the world for centuries. It contains several anti-inflammatory substances. For example, the protein cysteine, which reduces swelling in the mucous membranes. It also contains immune-boosting zinc. Studies show that chicken soup even works against high blood pressure, with the help of collagen, which, like cysteine, is mainly found in connective tissue and cartilage. That's why it makes sense to use a whole chicken for soup and not just a chicken breast. Slow heating and gentle, long simmering help to release the healthy substances from the connective tissue and meat before they coagulate. The warmth and liquid of a broth or soup support the immune system and the mucous membranes. Heat promotes blood circulation. The rising steam acts like a mini inhalation. It moistens the mucous membranes and ensures that they work optimally, i.e. can fight off viruses and bacteria. COOKING YOUR OWN VEGETABLE BROTH Vegetarian soups are also helpful - so boil soup vegetables as a broth instead of chicken. This provides secondary plant substances and minerals. Vegetarian soups are best combined with pulses such as lentils. They contain almost as much anti-inflammatory cysteine as chicken or other meat. The soup can also be enriched with antibacterial and anti-inflammatory spices and the taste can be varied - for example with ginger, cloves, chili.
