Hello everyone and welcome♥ Let's start this new year together with my recipe for chocolate chip muffins in three versions: traditional, vegan and wholemeal :) I thought I'd add a few more details about wholemeal muffins, so you can prepare them effortlessly even in this lighter and healthier version. To conclude, a little overview of my favorite equipment to make them, hoping that my little experience can be useful to you for targeted and informed purchases. I really hope you like this pocket-sized handbook on muffins, let me know, I'm curious :) A hug to all of you who I missed a lot, Stefania TRADITIONAL VERSION for the buttermilk (alternatively 200g of cow or vegetable yogurt) 200g warm cow or vegetable milk a spoon 20g lemon juice or apple cider vinegar or wine vinegar - 3 organic eggs 160g white or brown sugar 105g of your favorite seed oil (I always use corn oil) a teaspoon vanilla extract or half a sachet of vanilla powder 320g 00 flour one sachet 16g baking powder a pinch of fine salt 100g chocolate chips Bake at 210°C for the first 4 minutes, then at 180°C for the remaining 15~18 minutes *always do the toothpick test before taking it out of the oven:) VEGAN VERSION for the vegetable buttermilk (alternatively 200g vegetable yogurt) 200g warm vegetable milk (it must have at least 3g of protein per 100ml, soy is the best) a spoon 20g lemon juice or apple cider vinegar or wine vinegar - 3 tablespoons of crushed flax seeds 90g water 160g white or brown sugar 105g of your favorite seed oil (I always use corn oil) a teaspoon of vanilla extract or half a sachet of vanilla powder 320g 00 flour one sachet 16g baking powder a pinch of fine salt 100g chocolate chips Bake at 210°C for the first 4 minutes, then at 180°C for the remaining 18-25 minutes *always do the toothpick test before taking them out of the oven:) WHOLEMEAL VERSION whether they are traditional or vegan, to make muffins with wholemeal flour you just need to replace the 00 flour with 290g of 0 flour, or flour 1 or wholemeal seed flour 2 Procedure, methods and cooking times remain unchanged!
