Your Sascia _______________________ RECIPE Ghee in a slow cooker 3.5l 8x 250g unsalted butter Butter: According to Ayurveda, sour cream butter is easier to digest than sweet cream butter. There is no difference in taste between sweet cream butter and mildly soured butter in the finished ghee. Melt the butter in the slow cooker on the LOW setting and simmer gently, but do not boil. While simmering, the butter separates into its components: the top and bottom layers, which contain water, milk protein, and carbohydrates; and the middle layer, the pure butterfat, i.e. our ghee. Skim off the foaming milk protein, but do not touch the sediment, the whey. The ghee is ready when the middle layer, i.e. the butter fat, is clear, the sediment is golden brown, max. light nut brown but not black, and no more foam forms. Pour into sterilized jars, leave to cool and store in a cool, dark place. Dispose of the foam and sediment in a dry place: in the garbage can, not down the drain! If bottled and stored under optimal conditions, the ghee will keep for around 1 year +. It does not need to be stored in the refrigerator. USE The smoke point of ghee is 205°C. Ghee can therefore be heated to high temperatures and can therefore also be used for searing or deep-frying.
