Mini muffins: For banana bread muffins, mix 250 grams of spelt flour, 50 grams of sugar, a tablespoon of cinnamon, two pinches of salt and a teaspoon of baking powder. Puree two ripe bananas, add 120 grams of melted butter, two eggs and vanilla extract. Mix the mixture with the flour mixture. Pour the dough into a mini muffin tray and sprinkle toppings such as almond slivers or raisins on the muffins. Bake the muffins in the oven at 175 degrees circulating air for 15 to 20 minutes. Freeze the cooled muffins in a labeled freezer bag and take them out in the morning as needed. 2. Pancakes: Mix a pancake batter with eggs, flour, milk and salt. Add ingredients of your choice such as grated apple or blueberries. Bake the pancakes and freeze them by placing a piece of baking paper between each pancake. This way you can easily remove them in portions. 3. Waffles: Choose a recipe without added sugar, for example carrot or pizza waffles. Freeze the waffles and defrost them as needed. 4. Smoothie bags: Cut ripe fruit and vegetables of your choice into pieces, for example melon, mango, spinach or cucumber. Freeze the fruit and vegetable pieces in portions in a freezer bag. Mix the ingredients into a smoothie in the morning and top them up with water if necessary. 5. Fruit bowls: Fill silicone molds with fresh fruit such as blueberries, grapes or melon pieces and freeze them. Put the molds with the fruit in the lunch box in the morning. 6. Breakfast muffins: Place empty silicone molds next to each other in a Tupperware container. Fill the bottom of the molds with frozen mini rösti or cooked pasta from the day before, for example. Add vegetables of your choice and grated cheese. Close the container and put it in the freezer. In the morning, take the desired number of muffins out of the Tupperware container and pour a fresh scrambled egg mixture made from eggs, milk, salt and herbs over them.
