The best pork patties or cold meats are the ones made from pork and I make them according to my mother's recipe, like in Transylvania. Traditionally, we make patties for Epiphany, not for Christmas or New Year's Eve, and we decorate them with sweet paprika. They are also called aituri, cocioane or cotoroage and I prepare them with pork feet (adidași), raw knuckles and, optionally, with pig ears. You can also add tongue or pieces of lean meat. My mother doesn't put smoked meats, but it's not wrong if you do. These cartilaginous pieces (with skin and joints) are rich in collagen and natural gelatin, the simple patty sets naturally. We don't put any vegetables or herbs in the aspic, but we only use salt, pepper and lots of garlic. I divide the garlic in 2: half I boil at the beginning and half at the end. We have been boiling the meatballs (for over 50 years) in a pressure cooker (kukta) because it shortens the cooking time considerably. We strain and filter the aspic through a thick sieve lined with cotton fibers (sterile cotton wool), thus the meatballs come out sufficiently clear.
