Here are 4 ideas for a quick, healthy, savory breakfast at home: 1) Avocado toast with pumpkin seeds Ingredients: A slice of bread (preferably whole wheat) Half an avocado Half a lime Salt to taste 1 egg A handful of pumpkin seeds Method: Toast the bread in a pan or in a toaster. Mash the avocado and mix with lime juice (or lemon if you prefer). Do not add oil, avocado is already a fat. Spread the avocado cream on the bread and serve with a fried egg and pumpkin seeds. 2) Salmon and ricotta crostini Ingredients: two wholemeal crostini (or rice cakes) 100 g ricotta 70 g smoked salmon 2 shelled walnuts pink pepper to taste 3) Tofu scramble Ingredients: 70 g firm tofu (the firmest one) 30 ml coconut milk half a teaspoon of turmeric powder nutritional yeast water to taste Method: Crumble the tofu with your hands. Sauté in a pan with a spoonful of oil for a couple of minutes. Add the turmeric and mix well. Add the coconut milk, a drop of water and the nutritional yeast, salt and mix well to dry everything. Serve on toast. 4) Mushroom omelette Ingredients: two egg whites and one egg yolk salt to taste mushrooms rosemary Method: Sauté the mushrooms in a pan with oil and rosemary. Mix the eggs well and cook them as an omelette in a lightly oiled pan. Serve the omelette with the mushrooms.
