Food costs are rising - it's annoying when not everything is used or ends up in the trash. Recipes for conjuring up delicious things from leftovers or peels and leaves are simple. ----------- This video is an excerpt from the broadcast on May 24, 2022. Full Marktcheck episodes including subtitles in the media library: http://x.swr.de/s/13zv. ------------ RECYCLING LEFTOVERS: REUSE OLD BREAD, POTATOES AND GREEN VEGETABLES Along with fruit and vegetables, leftover bread makes up the largest proportion of our organic waste. If the bread has gone dry again quickly, there are delicious recipes for reusing it. BREADCRUMBS AS A CLASSIC The well-known breadcrumbs are useful in many dishes. Whether for breading meat or vegetables, as a binding for meatballs or in dumpling dough. The good thing is that the breadcrumbs can be grated from any leftover bread. Nothing has to be left over. The only important thing is that the leftovers are well dried and do not go moldy. TOAST BREAD LEFTOVERS AND ADD THEM TO THE SALAD If you don't feel like breadcrumbs, you can simply toast the old bread leftovers without fat in the oven or in a pan with a little butter or oil. As cubes, they give any salad an extra crunch and make soups more interesting. They also make a delicious snack alternative as bread chips with a clove of garlic, a little thyme or paprika powder. The leftovers can also be enjoyed as crispy toasted slices baked with cheese or as a classic starter in the form of bruschetta. SWEET TREATS There is also something for fans of sweet treats: French toast, cherry biscuits, bread or oven-baked dumplings are particularly suitable for leftover light bread rolls, baguettes, croissants or toast. TRUST YOUR NOSE AND EYES But it's not just hard bread that is often mistakenly thrown away too quickly, but also packaged products. Food that has already passed its best-before date usually doesn't have to go straight into the garbage bin. Dairy products such as quark or yoghurt in particular can still be kept long after the date. As long as they don't go moldy, the best thing to do is to rely on your senses and smell them. GREEN IMMUNE BOOSTER The green appendage on vegetables has a lot to offer. The leaves of cruciferous and cabbage plants contain many healthy plant secondary substances. Kohlrabi leaves contain twice as much vitamin A and C as the tuber. Radish greens also contain a lot of mustard oils, which strengthen our immune system. And don't forget carrot greens, which can be processed into a spicy pesto, for example. WARNING: NOT ALL GREENS ARE THE SAME Eating the vegetable leaves is not always safe, however. You should keep your hands off rhubarb leaves and all nightshades. So don't eat tomato, pepper or potato leaves! LEFTOVER POTATOES It's a different story with potatoes themselves. Leftover vegetables don't have to go in the trash so quickly. Potatoes can be used very well in recipes like "mock hare without meat".
