One of our favorite winter clothes. It is not known whether the more popular are the broccoli, from which sarma is made, while the central leaves are used for salad, or the ribanac, which is used both for salad and for stew. This is the recipe and the way sauerkraut is put here in Bačka, where a layer of grated cheese goes into the same barrel, then a layer of brussels sprouts, and so on until the barrel is full. About 3% salt is added, which depends on the taste of the household. Ingredients for a 30 l barrel: 16 kg of cleaned cabbage 480 g of salt a few pepperoni Preparation: Clean the outer leaves from the heads of cabbage. Choose 6 heads for Brussels sprouts and dig out their roots. Grate the remaining heads as for salad. Pour a layer of 6-7 cm grated cabbage on the bottom of the barrel, salt it with 1 handful of salt and compact it well with a wooden mallet. Arrange 3 broccoli on it so that the cut part is facing up. Pour salt into the part where the root was taken out, and again compact the grated cabbage well around the heads. Add a layer of cabbage on top, compact carefully so as not to damage the leaves on future cuts, add salt, and repeat everything once more. Put a few pepperoni in the top layer of grated cabbage. Put a lid from a barrel or a plastic grate on top, which prevents the cabbage from floating out of the liquid. Pour enough cold water so that all the cabbage is in the water, i.e. future brine. Put a clean napkin on top and press everything with a stone. Keep the barrels with cabbage in a warm place until it becomes sour, and then transfer it to a cold place. The napkin should be washed periodically, and the top layer of brine should be removed as needed and again topped up with clean cold water and possibly salt. The acidity of the brine is dosed with cold water.
