Commonly prepared with puff pastry or shortcrust pastry, savory strudel can include a variety of vegetables such as courgettes, aubergines, peppers and spinach, often enriched with cheeses such as ricotta or feta cheese. The combination of fresh ingredients wrapped in a crunchy layer of pastry creates a contrast of textures and flavours, making this dish a delicious and creative option for a light and appetizing meal. The versatility of the vegetables allows you to adapt the recipe to your personal preferences, thus offering an appealing culinary solution for those looking for a savory alternative to the classic sweet strudel. For this savoy strudel recipe you can use the vegetables you prefer, even mixed. On this occasion I prepare it with cabbage but other vegetables are valid such as: spinach, black cabbage, broccoli, radicchio, pumpkin. Other variations can be the addition of ingredients such as browned bacon, sausage, stringy cheeses to the strudel. Prepare 500 g of cleaned cabbage, the heart of the cabbage and cut it finely. In a sufficiently large pot put only 2 tablespoons of oil and add the cabbage, salt and pepper, brown for 2 minutes, add half a glass of water and cook with the lid on for about 15-20 minutes, remember to mix often. The cabbage should be cooked but not too much, and very dry, if it is not dry, cook it for another 5 minutes without the lid on high heat and it will dry well. Let it cool. Prepare the shortcrust pastry, or you can buy ready-made rolls of shortcrust pastry or puff pastry. 150 g of flour, 75 g of water (or white wine) and two tablespoons of oil. Knead very simply, and if the shortcrust pastry dough is a little sticky you can add a little more flour. Cover the shortcrust pastry and let it rest for 10 minutes. The filling. Take the cabbage, now lukewarm, almost cold, and add 250 g of ricotta, add 3 tablespoons of parmesan and mix well. At this stage you can add other ingredients to your liking that I have listed above. I recommend you keep things simple because it is a cinema strudel, there is no need to complicate it too much. Get 2 fresh eggs, separate the yolks from the egg whites that you will put in a bowl. Put one of the yolks with the cabbage and one in a glass with 2 tablespoons of milk. Set aside the one with the milk, mix the one in the cabbage well, and whip the 2 egg whites until stiff. Add the whipped egg to the cabbage but only resting it on top, without mixing. With a rolling pin, roll out the shortcrust pastry and create a fairly regular rectangle of about 30x40 cm. Thickness of a millimeter or a little more. Mix the cabbage with the whipped egg white with movements from the bottom up. Place the filling in the center of the pastry, arranged well as I show in the recipe, and with a pastry wheel make cuts in the pastry that start from the filling outwards, creating strips of about 2 cm. Use these strips to cover the filling, creating a sort of mummy. Brush the strudel with the egg and milk, adding a little salt. Bake at 180 degrees for 35 minutes. The strudel will swell a little in the oven and will keep its shape even after being cold.
