Instagram: / carla__caspary Facebook: / healthyfoodhealthymood Ingredients Herb butter 250 g vegan butter 2 handfuls of herbs (e.g. parsley, sage, oregano, thyme, basil) 2 charlottes 3 cloves of garlic Dash of lemon juice Dash of agave syrup Basics: salt & pepper I olive oil Preparation: Finely dice the charlotte, press the garlic. Briefly glaze both in a pan with a little olive oil and a dash of agave syrup. This gives the onion and garlic a pleasant taste. It also takes out the spiciness and creates a lovely aroma. Now allow the garlic and onion mixture to cool. Chop the herbs finely. Mix soft butter with finely chopped herbs, garlic and onion mixture, salt and pepper and a dash of olive oil to form a homogeneous mixture. Add a dash of lemon juice for a pleasantly sour aroma. The mixture is now either spread into an ice cube tray or filled into a piping bag and used to pipe small rosettes. The butter is then placed in the freezer for at least 2 hours. Alternatively, you can also put the mixture on a sufficiently large area of cling film. The film is then beaten together and the butter mixture is formed into a roll. With the first two variants, a piece of herb butter can be taken from the freezer either as a herb butter cube or as a rosette. With the second variant, you cut a little off the roll and store the rest wrapped in foil in the freezer compartment. The herb butter tastes great with potatoes and steamed vegetables. Ingredients for tomato butter: 250 g butter 75 g dried tomatoes 3 tsp tomato paste 2 charlottes 3 cloves of garlic 3 sprigs of fresh basil Dash of agave syrup Dash of lemon juice Basics: Salt & pepper I Olive oil Preparation: Cut the charlotte into fine cubes, press the garlic. Briefly sauté both in a pan with a little olive oil and a dash of agave syrup. This gives the onion and garlic a pleasant taste. The spiciness also goes out of the onion and a full-bodied aroma is created. Allow the onion mixture to cool well. The dried tomatoes and fresh basil are chopped. Mix soft butter with tomato paste, finely chopped dried tomatoes and fresh basil, salt and pepper and a dash of lemon juice with a fork to form an even mass. The mass is then formed into semi-circular balls on foil using an ice cream proportioner and chilled in the freezer.
