Recipe for Thermomix® TM6, TM5, TM31: for approx. 300-330 g ricotta 1.5 litres of fresh whole milk 3.8% or UHT milk 3.5% fat content 1/2 teaspoon of salt as a natural flavour enhancer 50 g white vinegar (table vinegar) if you are using the ricotta for savoury dishes OR 50 g fresh lemon juice if you are using the ricotta for sweet dishes Put the milk and salt in the mixing bowl. 12 minutes / 90℃ / level 2 If you are using milk from the fridge, it may take longer - heat until it reaches 90℃. Pour the milk into a preheated bowl. Slowly add the vinegar (for savoury dishes) OR the lemon juice (for desserts or cakes) and stir briefly and carefully with the spatula. Leave undisturbed with the cheesecloth (see recommendation list) for about 60 minutes so that the whey and curd can separate. Using a slotted spoon, carefully place the curd into a sieve lined with cheesecloth and leave to drain for about 30 minutes. Catch the whey that comes out. Now you have two options. 1. Do what I do and cover the ricotta well with cling film, leave it to drain in the fridge for about 4 hours or overnight and then place it in a sterile screw-top jar OR 2. After draining, fill it into a sterile jar. Avoid pressing the ricotta. It must retain its loose consistency. After filling, leave the jar open until the ricotta has cooled completely. If any whey still settles in the jar, pour it off. Then close the jar and store it in the coldest part of the fridge.
